Emerge is brought to you by the minds of our brewers. It was crafted through careful tasting and blending trials, and respect for the element of time.

Along with the culinary touch of meticulously toasted organic coconut from Hummingbird Wholesale and Bourbon-type vanilla beans from Singing Dog, a majority of Emerge spent time resting in freshly emptied whiskey barrels from Westward Distilling in Portland.

Tasting Notes

Aroma: Luscious toasted coconut sweetness gives way to layers of deep, dark chocolate, toffee, vanilla, and oak with a touch of whiskey.
Flavor: Intensely malty, with robust chocolate flavors and roastiness smoothed
by barrel-aging. Coconut lasts throughout, but doesn’t dominate.
Mouthfeel: A medley of sweetness, alcohol, and malt and barrel-derived tannins. Somewhat sticky, but also smooth and drinkable.

Serving & Pairing Suggestions

Serve in: Snifter to enhance aromatic enjoyment, and savor flavor evolution as it warms
Pairs with: Smoked Brisket and baked sweet potato, bloomy-rinded and Blue Cheeses with toasted pecans, fig jam, hot honey, and Vanilla Ice Cream, either separately or as a float
